No pics, but I made a terrific taco omelette today----fried up corn tortilla strips & sliced jalapenos in the eggs, cheese, taco meat and cheese inside, lettuce, tomato and sour cream on the side. Delicious.

Corn tortillas fried up in scrambled eggs is a Mexican breakfast staple. Gave me the idea.

That looks awesome Brandon! What do you do to stiffen the alfredo to make it stay in?

The shells are stuffed with chicken/ricotta/mozzarella/Parmesan. The sauce gets poured on the bottom before you put the shells in, then you pour it over the top and put more cheese on.
