Late dinner last night at one of my spots...

Botana de camarones with habañero

Was craving a ribeye steak, basil potatoes, and fresh cooked carrots.

Spinach & Swiss stuffed salmon with lemon, rosemary & chive roasted baby potatoes.

I eat a lot of fish.

Fried chicken, and drinks served in quart Mason jars.

Smoked a ribeye and reverse seared it.
Served with Parmesan herbed acorn squash.

Didn't get any pics of it, but here's dessert.
Apple hand pies.

Made chicken marsala for 6 yesterday. Served with a nice dry cab.

Twenty years ago I wouldn't have touched chicken thighs or avocado. Not sure about the combination but here we are.

Lobster tails with fresh garlic, fresh rosemary, salt and pepper.

How you been feeling lately with the big culinary changeups? Feeling pretty comfortable and satisfied with what you've been doing? I have a buddy who was forced to make some dramatic lifestyle changes recently.. he's really struggling.

The best pasta sauce I've ever made! But, that isn't saying a whole lot, I have never really worked at it too much.

I started with a basic sauce and added fresh pressed garlic and plenty of seasoning, and let it simmer for an hour.

I browned a pound of sausage and added the sausage to the sauce. I then cooked some fresh pressed garlic and fresh chopped Rosemary in the sausage grease.

I strained the garlic and rosemary and added it to the sauce and simmered it for another hour.

Garlic bread and a hefty glass of Bourbon Barrel aged cabernet.

I was, but I kinda follow the rules of "Don't ask questions, if you don't want to hear the answers" and "say what you mean, and mean what you say"

So these things didn't go well:
Her: Does this dress make my butt look big?
Me: No, you look awesome!
Her: I know you're lying, you like the black dress better!

Next time:
Her: Does this dress make my butt look big?
Me: I like the black dress better.
Her: You're an asshole!

Or:
Me: What's wrong honey?
Her: Nothing.
Me: Okay.
Her: You don't even care!
Me: What do you mean?
Her: You can tell I'm upset!

Or:
Me: Do you mind if I go on Tom's golf trip June 7-9?
Her: Not at all ..... have fun.
Her: On June 6th: I can't believe you are doing this, I think you care about golf more than you care about me!
Me: You're kinda pushing it that way.
Her: Fuck you!

Looks can be deceiving. Tried a carnivore pizza. Made the crust too thick. Will thin it down next time and add more seasoning. Live and learn, hopefully!
