Covered it with a rub, put on the smoker at 225 until it reached 125 degrees, pulled it off and kicked the smoker to 500 Degrees and put a seer pan in. once at temp put the steak in for 3 minutes per side.Have always wanted to do one will have to let me know what you did.
Trifecta of meat over an open fire…. Elk tenderloin, beef tenderloin, and a beef bone in rib-eye. Cut up some potatoes, onions, and peppers to make a really good pan of hash browns. Finally didn’t overcook a single piece of meat!
Cooked all of it in copious amounts of bacon grease…. That was definitely the right call. Kids are sitting here comatose.

Could not believe the price of $5.69 a lb. I saw last Friday. I have roasted chestnuts for years. Will suck it up & do it again. Family expects them at the holiday table.No chestnuts?
