I am trying to duplicate this recipe and while I got the flavor very very close, I couldn't get the brussel sprouts truly crispy.

This is what I did, any suggestions on how to get the Sprouts more crispy would be appreciated! I asked @jfields John but we all know he can't cook worth a shit! 😂

Preheat oven to 400°, trim ends, cut in half, save leaves.

Sear cut ends in cast iron, place on cookie sheet, cut side down, put in oven for 8 minutes, sprinkle with sesame seeds and leaves, broil for another 6 minutes.

Toss in cast iron with sweet chili sauce.

You are only going to get the outside leaves to get crispy. They look great!

At the restaurant there was a definite "crunch" in the appetizer. I am thinking they broiled the leaves, making them crunchy like chips, and that may be what created the crunch in the dish?

Mine come out crispy on the outer few layers. I mean you wouldn't want your brussels like biting into burnt rock candy. Coming into contact with parchment before the hot metal pan will affect it. Also, I like smaller baby brussels. They will cook faster than the larger ones. Have you ever checked the temperature on your oven Jeff?
Tossing them in oil will also do it. Just a light spritz with a spray bottle.

I seared the cut side in cast iron before putting them in the oven. That's why I useed parchment paper. I am going to try them tonight in my air fryer and I think I will get distinctly different results!

I did check my oven temperature and it is spot on.

Update, the air fryer was the ticket, they came out crispy and delicious!
