What’s on the grill/smoker today? 2021

Looks like you got some good smoke in it. What type of wood did you use?
Have to admit, I used the pellet smoker this time for convenience’s sake. Still gets a great smoke ring though. I blend oak and pecan pellets usually. About 2/3 oak & 1/3 pecan. Sometimes I chunk some apple pellets in the hopper as well.
Comes out the same as with my stick burner, where I use oak mini-logs with pecan and apple chunks.
 
This steak was an inch and a half thick and I lost patience waiting for it to thaw. I came up with a cooking method that turned out to be outstanding!

I heated the fire brick side of my grill just to bring the temperature up to 120 or so and put a smoker tube in with the steak for 30 minutes.

I then cranked the grill up and left the steak above the fire brick so that it would basically bake for 8 minutes per side.

Then I moved the steak over to the flame side of the grill for 4 minutes per side and it was amazing!

A bottle of Napa Valley Cab and I am a happy camper!

Off to the humidor to finish off the beginning of a great evening!
