What are you brewing?

Just transfered to bottles 5 Gal of Brewer's Best American Pale Ale. Looking for more flavor then my last and first batch of American Light. Sould find out in a week.
 
Have to transfer my IRA soon, then figure out my stir plat I think before I brew again.
But up next is either my Christmas Ale, or the Chocolate Coffee Porter.

So I think the last thing I posted on was the Caribou Slobber that we brewed up, which should be drinkable this weekend. Since then we also brewed up a Kolsch and dry Irish Stout. This weekend we are going to do a Dunkelwiesen

The Octane IPA has some inconsistent carbonation so I am letting those sit for a bit longer to see if they can come out of it ok.

The scotch ale is at about the 2 month mark and while I have had 2 already, I am going to let the rest sit until 3 at least to develop some more. I can already taste a huge difference between weeks 4 and 8.
 
Just kegged a batch of Bourbon Vanilla Porter for the fall/early winter season. Uncarbed at the point of tasting, but OH MY GOODNESS! Best beer I've brewed so far. I can't wait to taste it once it's carbed all the way.
 
Waiting for my CO2 tank to come back from hydro testing. Then I have 15g of Apfelwein to keg and 5g of Dark Strong.

That sounds like a fantastic beer. Have a feeling it will be a perfect winter beer too, good choice.
 
Any of you guys ever done a Belgian IPA? Any thoughts on what hops to use? I'm going to use WLP540 and a pretty standard IPA grain bill.
 
I've got a smoked porter cued up for the next week or so. Should be a tasty winter beer.

Have not done one myself but Midwest Supplies (like their kits) has one that uses Sterling and Ahtanum.

I ended up going with hallertau/saaz/perle. The first two are on their way from hops direct and I already have a bunch of perle.
 
Spiced Christmas Ale is mid-boil as I type. I've never had a spiced beer, so this is an experiment. If it's good, we'll drink it at the family get together. If it stinks, I'll just bottle some up and give it to the BIL and SIL for gifts. :p

I did one based on Houblon Chouffe. It was alright. I think you'll get a better flavor profile from the Euro hops and the Belgo yeast because I think the USA hops and Belgo yeast clash most of the time.
 
That scotch ale I talked about before is fantastic right now and the caribou slobber is great too.

Unfortunately the Octane IPA never did carbonate. Still not sure what happened on that one. It had a great flavor too so that is unfortunate.

Dry Irish Stout is good. I think one more week will be perfect. I am going to try another first to make sure though.

Kolsch will be tried tomorrow so that should be fun.

Our Holiday Ale has been in the bottles for about 4 weeks now so when it comes time for November and December family time the extended family will be content.

I made a mistake too by the way it is actually not a dunkelweizen but a Weizenbock. That one was just bottled this weekend when we brewed a Belgian Tripel so there is some time left there.
 
A weizenbock has been on my to do list for a long time. Love that style

The kolsch is actually already completed. We do not have equipment to do a full fermenter cold condition so I let the carbonation build up and threw my whole case of bottles in the fridge. They have been in there for a few weeks now so I am going to try one out tonight.

As for the yeast we used the Wyeast 2565 which is a Kolsch yeast.
