Speaking of brisket, we were at Costco over the weekend. $85 for a f'ing brisket. WTF.
I’ve seen much worse than that! But I don’t make it to Costco much. Hard to justify the membership if I’m only buying beef once a year or something.

I mean there were briskets over $100+. It's crazy.
 
I’ve seen some stuff at Meijer and Kroger that looked terrible and were well past $100. I agree it is crazy, especially if the cut is terrible to begin with
 
That used to be considered a throw away cut of beef that was only good for for a minority group of people. Now it is considered a "delicacy/top cut" (demand/saupply).

I remember those days. The Internet cooking show craze, and TV specials on BBQ and whatnot have eliminated any "cheap cuts" now. Even short rib used to be considered a cheap cut once upon a time. Most of the braising meats were. Not anymore. Here's an example of a recipe out of Food & Wine magazine.

Cookbook author and chef Asha Gomez braises boneless beef short ribs in a sauce perfumed with curry leaves, star anise, cinnamon, and garam masala in this recipe her grandmother would prepare for Christmas in India. One reviewer describes the meat as "very tender, not too spicy but warm in flavor, and it had a little crust on the outside which was really nice."

No wonder nothing is cheap anymore! Short ribs price like steak now. 🤬

Ribs in general used to be almost given away back in the 50's and 60's, as my Dad had said when I first got my smoker years ago.
