Update:
While the firebrick worked out perfectly for even cooking and smoking, the T-bone I had last night had to be moved directly above flame to let the drippings sear the steak. I think I will leave half of the grill with firebrick, for things like veggies and things that don't require searing, and go back to the lava rocks for the other (searing) half.
