FT's Gumbo Pass

Just noticed that my web server is down at the moment and I can't ssh into it to find out why. Maybe the power's out at my house or maybe my ISP is down. I won't have a chance to check it out until I get home tonight...sorry for any inconvenience.

Mmmmm roux. My method is the two beer roux. By the time you finish two beers, you got yoself a mighty fine deep, dark roux

Haven't made gumbo in a loooong time. Maybe after I get the box I'll have to make a Greg inspired gumbo....
 
My method is a little more aggressive, Tony. I hate stirring, so I heat the oil until it starts to smoke, then I start adding the flour a little at a time, stirring like hell the whole time. Roux is done in 5 minutes. When it gets to the color you want, you add the chopped veggies (onion, celery & bell pepper - the holy trinity of Cajun cooking) and that prevents the roux from getting any darker. Insta-roux!!
 
I'm lazy, I bought a jar full from a friend in LA.!!! :D
 
A friend of mine just gave me his receipe (sp?) anyway...his alternative to a roux is to start dumping frozen breaded okra in.... the breading becomes the roux.

My mother thinks I'm a heretic for doing it the way I do....wonder what she'd think of that approach?? Whatever works, I always say. :thumbs: Of course, Leebo's got the best method of all: get somebody else to do it for you. Can you believe? He even mooches roux. :D
 
As I feared, my network is offline at the moment. Adelphia is sending someone out tomorrow to check it out (and hopefully fix it). I have access from work, so I'll be checking in during the day today, but after that, I'll be down for a while.

There's good news and there's ...uh... weird news (x2).

Good news: Pass got here, cigars look to be fine.

Weird news #1: No put/take list. I guess I'll have to spread those babies out and man-handle each one of them to see what's in here.

Weird news #2: I noticed that the list of people this pass goes to ends with DaveWF -- Father T's address is no where on the list. A generous move, to be sure, but perhaps not what he intended :)

Ok, I'll go over this and post P & T later.

I think he has a link to a list of what's in the box. Email him re: puts and takes and he'll update the list, bro!

Ok, I can't get the spreadsheet link to work (it worked yesterday or 2 ago) -- "connection failure occurred" -- and now it's approaching bedtime.

All I want to know is if either #5 or #7 are ISOM. I think not (no "habana" on the band), but I don't want to be grabbing a bunch of ISOMs and replacing with non.

Well, I was going to try to rush this out by noon (got plans for the afternoon & evening) -- but I think I'm going to wait until I see the sheet. I guess I'll check it again about 11:30 (am) and, if it's up, I'll mail, otherwise, it won't go out until Monday.

Misc, there was a puts/takes list in there and some other paperwork. Perhaps Ben forgot to repack it? There should have also been a cover letter and gumbo recipes for everyone.

Yes, I did forget to put my addy on the list - I'll get in touch with Dave and let him know what it is. Good catch, thanks!!

The Camacho isn't Cuban, it's Honduran so you may wanna reconsider your puts.

As for the missing list, I'll mail a copy to Bruddah Wade and ask him to put it in the box.

And I never said that seconds were horrible. I just didn't start with any and so didn't think it would be fair to allow them in trade for non-seconds. But I do appreciate the gift, I'll look forward to it.

Take a closer look...I think it says "Havana" not "Habana" (but I could be wrong...don't have one in front of me) and besides, that's the name of the cigar line, not where they come from.

Nice puts Misc and thank you very much for being a part of the pass. :thumbs: One question: any idea what that Cohiba was so that I can update the (once again functional) webpage? ???
