I know this is not cigar related, however..I like a nice cigar after dinner...so hence the question.

What is your favorite food recipe...If I get enough...I'll make up a Cigarpass BOTL .PDF cook book that I can email to those that want a copy

Here is one of my favorites.

Tequila Chicken Pasta

1 lb. pasta
1/3 C. fresh cilantro, minced
2 Tbsp. garlic, minced (I use more cause you can never have to much) :p
3 Tbsp. jalapeno, minced
3 Tbsp. unsalted butter
1/2 C. chicken stock
2 Tbsp. Tequila
2 Tbsp. lime juice
3 Tbsp. soy sauce
1 1/4 lbs. chicken breast, sliced 1/2 in. thick
1/2 red onion, sliced thin
1 green bell pepper, sliced thin
1 1/2 C. heavy Cream

In a medium sauce pan, melt 2 tablespoons of the butter over medium heat. Add cilantro, garlic and jalepeno. Cook, stirring occationally for 5 minutes. Add chicken stock, tequila and lime juice. Bring to boil and cook intill reduced to a paste like consistency: set aside.

Pour soy sauce over sliced chicken breast and set aside for about 5 minutes. Meanwhile, in a large frying pan, melt remaining butter over medium high heat. Cook onion and green pepper until tender. Add chicken and soy sauce. When chicken is cooked (about 7 minutes), add tequila paste and cream. Bring to a boil; boil gently until sauce has slightly thickened. Toss in pasta and serve.

Include a loaf of toasted garlic bread. Also good with a bottle of mildly sweet Riesling. :D
 
Here is one of mine..

Stir-Fried Shrimp in a Tomato-Cream Sauce

For sauce:

1 Tbs Tomato Paste
3/4 tsp Salt
1/4 tsp Sugar
1 tsp Curry powder
1/2 tsp Cumin
1/4 tsp Cayenne pepper
3 Tbs Cilantro
1 Tbs Lemon Juice
1 Tbs Water
7/8 cup heavy whipping cream

For stir-frying shrimp:

3 Tbs Veg Oil
3 Cloves garlic
1-2 lbs Med shrimp, peeled & deveined

To make sauce: Put the tomato paste in bowl, Add salt, sugar, cumin, cayenne, curry powder, cilantro, lemon juice, water...mix well then add heavy cream, slowly mix until smooth.

To stir-fry shrimp:
Heat veg. oil over medium-high heat, add garlic...cook garlic till golden brown. Add shrimp and cook shrimp till mostly cooked through...lower heat to medium, add sauce and cook until sauce begins to simmer.

Serves 4

Drink with a chilled beer or Riesling wine

Then enjoy a favorite cigar

First Recipe:

German Pumkin Chocolate* Chip Cookies
(1)
1 can Cooked Pumpkin (for 30 oz can - triple remaining recipe)
1/2 Cup Oil
1 Cup Sugar
1 Egg
1 Tsp Vanilla Extract
1 Tsp Baking Soda dissolved in 1 Tsp milk**
(2)
2 cups Sugar
2 Tsp Baking Powder
2 Tsp Ground Cinnamon (or to taste)

* Adds (Use any to taste): Chocolate Chips, PB Chips, Butterscotch Chips, Almonds, Walnuts, Black Walnuts, Macadamias

** Make sure all the soda dissolves or it may clump and leave white dots in the cookies

Add all of (1) in a large mixing bowl

Blend all of (2) in seperate bowl

Slowly mix (2) into (1) in half cup increments, blending smooth.

Drop my spoonful onto baking sheet and Bake at 350 for about 10-12 minutes. Cookies are done when they have a golden orange hue (like the rising sun) and should have a plump moist look and almost have the texture of mini-cakes. Alternative baking (good for parties) Bake in 24 ct mini-muffin pan at 350 for 8-10 minutes.
 
One of my favorites

Very Blueberry Muffins

2 cups unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup plain yogurt
1 teaspoon baking soda
1 egg 1/2 cup canola oil
1/2 cup sugar
1 teaspoon vanilla
1 cup blueberries (frozen drained) or fresh

Preheat oven to 350F. Sift together flouer,baking powder, & salt. In a seperate bowl, combine the yogurt with the soda; set the mixture aside. Beat the egg in a third bowl, then add the oil, sugar, & vanilla, & stir to combine. Add the flour mixture & the yogurt mixture alternately to the egg mixture.
Gently fold in the blueberries. Pour into greased muffin tins & bake for 25-30 minutes.
you can top with brown sugar or oatmeal topping before baking

Makes 12 muffins
I like to double the recipe. I can eat 4-5 with my morning coffee

Wiener Pizza

1 large can baked-beans
4-6 hotdogs
1 cup(s) Colby Cheese
1 pre-maded Pizza Crust
1 dash salt (optional)


Pizza crust can be plain or with garlic (my favorite) from makers like Baboli.

Warm beans in pan or microwave. Spread beans in thin layer on pizza crust. Sprinkle half of cheese over beans. Slice hotdogs into 1/4 slices and place on top of beans like pepperoni slices. Top with remainder of cheese. Add a sprinkle of salt depending on your taste.

Bake on middle rack at 375 for 10-15 minutes or until cheese starts to brown.

Slice and enjoy!

One of my favorites for dinner is wild duck prepared as described below. I don't get a chance to have it very often since my wife doesn't eat it, but prepared this way, it is outstanding and good wild duck recipes are very hard to come by.

6 duck breasts (without bones) note..I would have said boned but that sent another thread totally sideways :D

Marinate overnight in the following:
2 cups dry red wine
1 tsp mustard powder
1/2 cup soy sauce
1 tsp garlic powder

Make the following sauce:
1 stick butter
1 8oz or 10oz jar red current jelly
1/2 cup ketchup (catsup)
1/2 cup brown sugar

Mix ingredients in suacepan and heat until clarified.

Grill the duck for 6 minutes on each side remove from grill slice 1/4" thick and serve with sauce poured generously over the top.
 
Here's another one....

Tomato Basil Sauce Over Pasta

1 Lb. Spiral Pasta
3 or 4 Cloves of Garlic, Chopped
1/2 Onion, Chopped
1/2 tsp. Crushed Red Pepper Flakes
2 Tbls. Olive Oil
1 (28oz. ) Can Diced Tomatos in Juice
1 (8oz.) Can Tomato Sauce
Salt and Pepper
1/4 Lb. Prosciutto Ham, Thin Sliced
1 C. Frozen Peas (I prefer asparagus spears)
20 Leaves Fresh Basil, Shredded or Torn

Put a large pot on the stove over high heat for pasta. When water boils, cook pasta till al dente.

In Large, deep skillet, preheat over moderate heat, cook garlic, onion, and crushed red pepper in olive oil for 3 - 4 minutes. Add tomatos sauce, and Prociutto Ham to the pan. When tomatos start to bubble, reduce heat to simmer until slightly thickened. Season sauce with salt and pepper. Pour over pasta and serve. Best wih a loaf of Garlic Bread :love:
 
My favorite salad,
Caprese:

Fresh mozzarella cheese sliced about 1/4 inch
Roma tomatoes slices about 1/4 inch
Fresh basil leaves
Good balsamic vinegar
Extra virgin olive oil
Garlic salt
Fresh cracked pepper

Layer in a line around a plate:
cheese, basil, tomatoe
drizzle with vinegar and oil, garlic salt and pepper to taste.

Will share two of my most treasured recipies.

Peachy Dutch Oven French Toast

Egg mixture ingredients:
* 1 dozen eggs
* 2 cups milk
* 1/2 teaspoon vanilla
* 1 tablespoon cinnamon
* 1 loaf of French or Italian bread, sliced
* 1/2 pound butter or margarine
* 1 pound brown sugar
* 3 one-pound cans of peaches, drained and quartered

Heat a large Dutch oven by covering it with coals for 15 minutes. Beat the eggs, milk, vanilla, and cinnamon in a large mixing bowl. Slice the bread and let it soak in the egg mixture.
Remove preheated oven from coals and melt butter in the bottom. Add brown sugar and mix well with butter until caramelized. Put the drained peaches over the caramelized sugar. Place the eggbread mixture on top of the peaches, cover with lid, and return the Dutch oven to the coals.

Bake 45 minutes at about 350 degrees (medium hot coals). (Cooking time is shorter if the temperature is higher, but watch the edges so they don't burn.) For the first 10 minutes, use coals on the bottom only. Then add coals to the oven top and continue baking until done. With the caramel topping, you probably won't even need syrup.

Option: Try substituting 3 pounds sliced bananas for peaches.
Serves 8.

Note: Recipe can be sized down for less people. This is designed to be used on a camping trip w/ friends. Also, with the recipe cut down by half a glass 9x13 pan can be used for cooking at home in the oven. Just make the caramel sauce in a pan.

Pumpkin Cheesecake

1 ½ cups graham cracker crumbs
5 tblsp butter
1 tblsp sugar
24 oz. cream cheese
1 tsp vanilla
1 cup sugar
1 cup pumpkin, canned
3 large eggs
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp allspice
½ pint whipping cream

1. Preheat the oven to 350 degrees F.
2. Make the crust by combining the graham cracker crumbs with the melted butter and 1 tablespoon sugar in a medium bowl. Stir well enough to coat all of the crumbs with the butter, but not so much as to turn the mixture into paste. Keep it crumbly.
3. Press the crumbs onto the bottom and about two-thirds of the way up the sides of a 8-inch springform pan. You don't want the crust to form all of the way up the back of each slice of cheesecake. Bake the crust for 5 minutes, then set it aside until you are ready to fill it.
4. In a large mixing bowl combine the cream cheese, 1 cup sugar, and vanilla. Mix with an electric mixer until smooth.
5. Add the pumpkin, eggs, cinnamon, nutmeg, and allspice and continue to beat until smooth and creamy.
6. Pour the filling into the pan. Bake for 60 to 70 minutes. The top will turn a bit darker at this point. Remove from the oven and allow the cheesecake to cool.
7. When the cheesecake has come to room temperature, put it into the refrigerator. When the cheesecake has chilled, remove the pan sides and cut the cake into 8 equal pieces. Serve with a generous portion of whipped cream on top.
Serves 8.

1-2 package of weiners
1-2 package of hot dog buns
onions, mustard, relish, chili to taste
boil the weiners, put em in the bun, your choice of toppins :D
 
This one KICKS @$$

DRUNKEN CHICKEN

1 SIX PACK OF AMBER BOCK :thumbs:
1 BIG CHICKEN
A BUTT LOAD OF FRESH CHOPPED GARLIC
1 BIG LIME
SOME KOSHER SALT
A SOUP CAN

Recomend a charcoal grill heated to about 200 to 250 degrees. Things on the grill just dont taste right to me when you cook with gas.

Dice the garlic and scrape all the lime zest you can get from the lime and mix them togather with a nice big pinch of kosher salt.

Open one Amber Bock and drink 1/3 of it. Pour the other 2/3s of it in the empty soup can and squeeze all the juice from the lime you got your zest from into the soup can with the beer.

Wash the chicken good and pat dry. Using the garlic, salt and lime zest mix and rub it into the chicken (I even stuff the left over rub under the skin).

Using the soup can full of beer and lime juice as a kick stand...... Shove it up your BIG CHICKEN @$$ :0 (ok, the chicken's @$$) and stand it up right in your grill covered for about 1 1/2 to 2 hours.

I have a special stand that my dad found for me down in Jackson "Hole" Mississippi.

But you can set the whole thing on a aluminium pie tin ( just takes a little longer to cook the bottom end of the chicken).

You can also try this with a soup can full of water and a couple shots a your favorite spirit..JACK..Southern Comfort

SERVE WITH A NICE GREEN VEGGIE AND 5 AMBER BOCKS!!!!!!

Here's my favorite meal for ya'.

Texas Two Step Tasty Stuff

-Two red peppers (diced)
-Two orange peppers (diced)
-Two jalapenos (diced) **Optional**
-Two red onions (diced)
-Two 12 oz. cans of corn and corn juice
-Two cans of cooked black beans
-Cilantro to taste
-Salt and pepper to taste

Mix it all up in a bowl, refrigerate to cool, and yum. Healthy and tasty.

Rajun Cajun Ribeye

-One big ass'd ribeye steak (Big, damn it. Big!)
-Zatarain's cajun seasoning
-Sunflower oil
-Cast Iron Pan

-Put a tablespoon of sunflower oil in your cast iron pan and rub it around w/ a paper towel for even coverage
-Stick your oiled cast iron pan on your stove top
-Hit the heat brother! When the oil starts to smoke, back off the heat just a bit and let the pan further heat for five minutes
-Sprinkle the Zatarian's liberally on the room temperature steak and rub it in
-Throw the steak in the pan and look out! The cooking process is smokey as all get out but produces premium steak house quality results

Three minutes on each side for black and blue
Five minutes on each side for rare
I don't know beyond that. Steak is meant to be eaten rare :)

Plain old Dupont pan: It doesn't work. Doing it on the BBQ: It doesn't work. The way I described: It works. Just ask any great chef. They'll tell ya' the same.
 
Were getting some nice recipes here..that rib eye looks good, french toast for breakfast, pasta for lunch.

Beef Ribs

You need--- Beef Ribs 2 racks
3 Bottles Masterpiece Barbacue Sause(flavor is your choice)
Alum Foil
Baking pan (big enough to lay both racks flat)

Take your baking pan and cover the bottom of it with the barbacue sauce.

Put both racks of ribs in the pan. Lay both flat.

Cover both racks with remaining barbacue sauce.

Cover pan with alum foil. Set oven at 350deg. Cook ribs covered for 45min. Take alum foil off cook for another 45min. Baste ribs every so often.

After ribs are done cookin I place them on the grill for a couple of minutes to make the sauce stick.
