Christmas Parties and food choices

We all know the traditional meal items for Christmas day, but it seems this time of the year is also a great opportunity to have some fun and cook up something special. Many of us have at least one good holiday party to go to this year, and chances are you will probably bring a dish along.

This year, we are headed over to my bosses house (also good friends) for a Christmas eve day party. The dish I have chosen to make is Mussells, in a spicy marinara sauce. I first tried these up in New Jersey while visiting my soon to be wife's family. One of their close friends makes them every year, and I fell in love with them right away. I make a pretty damn good marinara sauce from scratch so its a no brainer.

I really love this particular dish, and it has a nice festive feel too it. For some reason, even people who would normally be leery of mussels, seem to at least want to give them a try. Paired with a good wine (to be determined) and we should have some happy folks.

I know it's not a tradition Christmas dish, but I usually like to make a big pot of Crawfish Etouffee (sp?) to take to the in-laws on Christmas Eve.
 
A tradition we've had for the last few years is to rotisserie up a big prime rib for the family dinner. The kids love to watch the roast "go round and round", the smells are heavenly, and the meal is wonderful.

Sweet Potato Casserole is my usual favorite Christmas/Thanksgiving item, but I don't bring it. I bring my parents/grandparents and my girlfriends family loaves of Walnut Cinnamon Bread. There's a member on here who recently tried some of my bread, and he threatened to out me for being domesticated. I did it for you sir. :blush:

My mother is a baker so I guess it's in the blood.

Let's see here ....... traditional is tamales, ceviche, and a Brie bread, but this year I'm including Serrano ham, a white anchovies appetizer and anchovie stuffed olives. We're also hosting a holiday party for friends this weekend where the main dish will be a chicken file gumbo that I've been perfecting over the last two years.

Oh, and Erick ..... all of my wine is already selected :rolleyes: :laugh:

I am not allowed to family functions without a shrimp platter.

Diced celery on a platter, covered with a layer of cream cheese, cocktail sauce over that and shrimp on top of it all.

Serve with crackers of your choice. I have found that the Chicken in a biscuit crackers are really good with this.

For Christmas we traditionally make two special items, Rum Balls and Cow Pie Dessert

Rum or Brandy or Bourbon Balls:

This can be done with either Rum, Brandy or Bourbon.

1 lb crushed Vanilla Wafers
1/2 Box Powdered Sugar
1/3 cup Light Corn Syrup
3 Tbsp Cocoa
3/4 Cup Rum or Brandy or Bourbon

Mix all ingredients. Shape into small balls and roll in additional powdered sugar. Chill then wrap each ball in wax paper and store in a tightly covered container.

Cow Pie:

1 cup flour
2 tsp baking powder
3/4 cup sugar
2 Tbsp cocoa
1/2 cup Milk
2 Tbsp Vegetable Oil
1 cup Brown Sugar
1/4 cup cocoa

The Batter: In a bowl combine the flour, baking powder sugar and 2 Tbsp. cocoa until blended. Stir in the milk and vegetable oil.

In a separate bowl mix the Brown Sugar with 1/4 cup cocoa.

Put the batter into an 8x8 baking dish. Take the separate brown sugar-cocoa mixture and sprinkle over the batter. Pour 1 3/4 cups of very hot water over all and bake in the oven for 45 minutes at 350 degrees.

This turns into a chocolate cake with gooey chocolate goodness under and goes great with ice cream.
 
Smoked picnic coated w/drk brown sugar, pot of slow cooked black-eyed peas with smoked ham hocks, mashed taters w/sweet ham gravy (made from the ham juices), collards, biscuits...oh...and cranberry sauce. Sweet tater pie for dessert.
 
I usually deep fry a turkey that has been rubbed and injected with my own seasoning concoction. We do this for New Years day.

Having spent two Christmas Dinners in Korea and one in Iraq (coming up on two in a couple of days) over the last five years I usually (I think we went to Taco Bell for one in Korea) head to the Dining Facility. The contractors do a great job of decorating the place and serving all the favorite holiday foods and desserts. All the food with out having to clean up or cook, and I get to spend it with some of the greatest people in the world.
 
We usually have either a Prime Rib roast, or some type of fancy spiral sliced ham. Same if we happen to go the in-laws for dinner.

Not as much for christmas, but in my family none of us really like turkey, so for thanksgiving, my mom makes a huge lasagna. In my opinion better then turkey, and you get to stay awake to watch football and smoke a cigar.

Shit, we usually just get a take out bucket from the colonel or Popeyes...... you guys do it up right.....






For a Christmas party that is not a sit down, you have got to have the little wienies in chilli sauce, mini meatballs and of course, nacho chips and chilli cheese sauce. Oh and don't forget the Sam Adams winter lager......

The only whine we'll be having is my kids when they don't get exactly what they want.... like an iPhone and a laptop.... friggin' 8 year olds think they are grown up already....

LOL. Step son had an iPod, Cell Phone, Laptop, digital camera and a wii on his wishlist. I guess he'll just have to whine about only getting the wii.
