Each time I serve this to family and friends it always receives rave reviews.
Ingredients:
4 boneless and skinless chicken breasts
4 tsp - oregano pesto
4 slices of mozzarella or provolone cheese
4 thin slices of proscuitto ham
Italian seasoned bread crumbs
2 - 3 eggs
flour for dredging
3 - 4 tbs of olive oil
1 tbs of butter
Directions:
Cut a pocket into the side of each chicken breast
Spread one tsp of pesto inside each breast
Roll one piece of cheese inside one slice of proscuitto and place inside each pocket
Dredge each breast into flour, egg then bread crumbs
Heat olive oil and butter in a skillet. Brown chicken breasts and remove to greased backing dish.
Place dish into 350 degree oven and bake for 30 minutes, then serve.
A nice complimentary dish is to par boil broccolli. Coat with garlic seasoned olive oil
Take 1/2 cup of olive oil and 4 or more cloves of garlic that has been thinly sliced and heat until the garlic begins to turn color. Remove from heat and add juice of one lemon. Spread over cooked broccolli.
A side dish of pasta will go nicely with the meal.
Don't forget the wine!
