Need a good Coleslaw recipe.

I am smoking up a couple Pork Shoulder roasts this weekend, and I need a Coleslaw recipe for the Pulled Pork sandwiches if somebody has one?

I already have the NC style BBQ Sauce hooked up thanks to Erick (Hillbilly Steaks), and a slightly different version with a little extra heat added in of my own creations.

Southern Coleslaw--
You said you hadn't had good southern slaw in a while and this was featured in Southern Living Magazine...The guy lives in Birmingham.

Ingredients
1/2 cup sugar
1/2 cup mayonnaise
1/4 cup milk
1/4 cup buttermilk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons white vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
2 (10-ounce) packages finely shredded (angel hair) cabbage
1 carrot, shredded


Preparation
Whisk together first 8 ingredients in a large bowl until blended. Add cabbage and carrot to bowl, and toss to coat. Cover and chill at least 2 hours.
Yield
Makes 8 to 10 servings

Here's how I make mine...

One head of cabbage cut into four wedges. I use a handheld medium grater to grate the cabbage. Take a large spoon (I use one of those big plastic spoons) and plop in about two to three spoons of mayonaise (Dukes!!). Squirt mustard in (about three times round). Add sweet cubed pickles and anywhere from half to whole onion chopped fine (optional). Pour in about a 1/2 cup sugar. Shake in salt (we use Lawrys garlic salt) and pepper to your liking. Pour vinegar over the mess (I use cider vinegar sometimes, other times Heinz salad vinegar or just plain white vinegar...whatever I'm in the mood for). Stir it all up, then have a taste. I'll add whatever I think it needs. ;)
 
If you look in the salad dressing/mayo section of your grocery store, they sell a "slaw dressing" made my Marzetti. For a quick and easy "homemade" slaw:

shred 1 head of cabbage
shred 2-3 carrots (until you like the color mix)
1 tsp celery seed
2/3 - 3/4 of the jar of slaw dressing (more/less to taste)

mix well, refrigerate for at least 1 hour (it's much better if it sits a bit).

If you have one of the slicers, you can knock this out in a few minutes and it is way better than store bought....
