Champagne Cocktails anyone?

So did a little back-searching, and found but a few threads on champagne/sparkling-wine.

Personally, with sparkling-wine a/k/a "Cook's Champagne" at around $6, and decent bottles from $20-35, believe that this is something that can be consumed more than just at weddings, Formula 1 races, and NYE.

Am curious, what are some good recipies for cockails using chapagne that you drink/have heard of?


I'll start:
French 75
50ml Gin
25ml Fresh Lime Juice
12.5ml Sugar Syrup
Champagne

Shake with ice the Gin, Lemon juice & Sugar syrup and strain into a Champagne flute and top with Champagne
Garnish with a lemon twist
 
Black Velvet = 1/3 Champagne + 2/3 Guiness Draft layered on top

Mimosa = 2/3 Champagne + 1/3 Orange Juice
 
Get Down From There
(or just a 'Get Down')

2 parts cheap champagne (sham-pon-ya)
1 part Redbull
 
The "Classic" Champagne Cocktail.

6 ounces chilled champagne
1 cube sugar
Angostura bitters

Start off by taking a single sugar cube, and while holding it over the opening of a bottle of Angostura bitters, invert the bottle so that some bitters soaks directly into the sugar. Drop the cube into the bottom of a champagne flute, and then fill the glass with champagne. For a garnish, you can add a lemon twist.
