I have fond memories of eating Cherry Delight growing up at reunions and family gatherings. There are two basic variations. One uses cream cheese mixed with the cool Whip, the other only Cool Whip or Whipping cream.
Cherry Delight
24 Graham crackers
1 stick Butter or margarine
1- large tub Cool Whip
10 oz package of cream cheese
1 large can cherry pie filling
Crush graham crackers to very fine consistency. Melt butter and mix well with cracker crumbs. Press into 9 x 13 well greased pan. Bake @ 325 degrees for 10 minutes. Let cool. Soften 10 oz package of cream cheese. thaw 1 large tub of Cool Whip. Beat two together and spread on cooled graham cracker crust. Spread cherry pie filling on top. Cool for 1 hr in fridge.
Alternate: can put some cream cheese/Cool Whip mix on bottom, cherry filling, then cover with rest of cream cheese/Cool Whip mix. I have seen it both ways.
