Hello Pass BOTLs!

Since we will be savoring our PIFd Cheeses very soon I thought I would further your CheesEducation by posting a tasting wheel for Cheeses so we could all “speak” in a similar language when the time comes. The first one is a link to a flavor wheel for Italian Cheese and works in reverse of most. The second wheel is a bit more for the scientists out there and the third tilts towards you poets out there. You can print them out, or just save the link for future use.

I’d like to take this opportunity to give you all a little insight into my love of cheese. I grew up in a decidedly European home, wine on the table, multi-course meals, and entrees that departed from the Betty Crocker meal index. Don’t get me wrong, we were a typical American family on the run during the week eating meatloaf and chicken, but it was when my family got together in the kitchen that the culinary magic happened. The afternoon usually started with some cheeses, usually Brie & Chevre, a couple of baguettes, and some of my Grandmere’s homemade pate. During the winter we would often start with onion with a smattering of Gruyère or Comté. After the entrée and the salad course, there was the cheese course. Always wonderful but even better when my Grandpere did the cheese shopping; he was born & raised in the southwest of France and introduced me to some of his favorite creameries over the years. Some of these crèmeries carried 300 plus varieties and had been in continuous operation by the same family for over 150 years. More about the types of cheese he would bring to the table later, I just thought I start with this bit. Cheese has been a part of my culinary life for as long as I can remember and that is why I am so pleased to share my love of it with all of you.

Rob I left you off just for general principles. ;) Just kiddin bro! I'll fix the list guys. Wilkey I know you're chomping at the bit. Now if everone on the no hear list will PM or chime in...

I didn't get a PM that I can see, however, this is me "checking in".

Internet is a bit sketchy for me at the moment. Having just moved in to my new house, I don't have internet yet, but I can keep up on my phone if I get a PM. I'll be diligent on checking in to make sure I'm on time and up to date.
